This is for 3 lbs. Fruit Pectin E440 made by Degussa Texturant Systems FRANCE - Unipectine QC 70. Please bid with confidence as this is a high quality pectin. This pectin is a High (methyl) ester pectin, with a degree of esterification above 50%.  The material only forms a gel in systems with more than 55% sugar solids and a PH within a narrow range of 3.0.  HM pectin gels are difficult to melt down. Here is a general recipe for use: FRUIT PECTIN MIX3 3/4 Cup Fruit5 1/4 Cup Sugar3 Tablespoons Fruit PectinYields approximately 6 cupsRecipe may vary due to moisture in fruit.Note: 1 oz. = 28.35 gramsRecipes use 1/3 cup which is equals to one box of pectin. This yeilds 70 batches of jam/jelly(**this recipe was taken from a website and is only a reference) Unipectine is the trade mark for pectin produced by Degussa (France), who are globally recognized as one of the leading pectin producers.
