You are bidding on high-altitude, vacuum-packed at origin 2007/08-crop, 100% specialty, Arabica (Tipica 80%, Caturra 20%) green, unroasted coffee beans.  These beans were shade-grown in the higher altitudes of the Caranavi region, depulped and washed using pure Andes glacier-melt water, sun-dried on wooden table tops and hand selected by "Palliris" (Aymara Indian women food graders).  These beans were processed by the PROAGRO cooperative and grown at Colonia Siete Estrellas, Chijchipani region.  These are not "commodity coffee" beans. They have both organic and Fair Trade® certifications.  These coffee beans have also been certified by the Smithsonian Migratory Bird Center as "Bird-Friendly®".  Unlike other coffee sellers, we give you the year of the crop, the specific quality grade, and the name of the farmer Co-Op behind them, not some meaningless, unsupported adjectives like "top grade" or "fresh".  This auction is for sixty six (66) pounds of one of the best, professionally graded and cupped, specialty coffees in the world shipped to you in a box with two 33-lb, vacuum-packed Mylar bags (see picture above).  It is cheaper to ship green coffee in plastic bags (like many coffee dealers do), but  this quality green coffee beans are vacuum-packed to minimize variations in humidity and retain its full aroma and flavor. Some coffee dealers call us "nuts" but we rather go through the added expense to maintain the high quality of our best coffee. This is our best coffee, it is hand selected and personally identified by Jorge, our Chief Buyer in Bolivia.  This coffee is only found in small batches and comes from a few, select farmers.  To preserve its taste and aroma we vacuum packed it, at origin, in 15 kilo bags and ship it from Bolivia to our temperature & humidity-controlled warehouse in Boston, where it is kept until its final sale .  This coffee is superb and makes a wonderful dark roast. Because they are larger and denser (grown at higher altitudes), we recommend these beans for darker roasts, such as espresso.  It can better take (and tolerate) the added heat. The 66-lb box, a half-sack, is intended for the commercial roaster, and/or for the home roaster who wants to buy in bulk and save on unit prices and shipping charges.  Because they are grown at high altitudes (hard bean) and below the Equator line, our green coffee beans can be stored in a cool, dry location, in the vacuum-packed bag supplied, for a long period or time (years) without any loss in flavor or quality.  Beans grown above the Equator (Colombia, Mexico, Central America, Hawaii, etc.) do not keep as well. Because of its complex flavor and aroma (see cupping notes above) we prefer an unblended (single varietal), dark (#35 Agtron/SCCA) roast for these coffee beans.  You may want to know, however, that other roasters use them as a mandatory component of their special "house" blend. Several of our growers have won the top four spots on the coveted Cup of Excellence® Awards in the 2003, 2004, 2005 and 2007 competitions. We bought the coveted 2007 competition first-place lot!  We stock and sell only high-quality Bolivian coffee.  All of our coffee beans are organic, the great majority are Fair Trade, and none have defects (rocks, ferment, insect attacks, mold, etc).  We carry both specialty and premium coffee beans.  We also carry a specialty-grade South American blend (Colombian, Peruvian) water decaffeinated coffee beans. What is "specialty" coffee?  There are two major species of coffee, robusta and arabica.  Robusta is grown at low altitudes, under full sun, has almost twice as much caffeine, and is the main ingredient of cheap, flavorless, "blended" commercial coffee available everywhere.  Arabica, grown at high altitudes (4,000 to 6,500 feet) with abundant rain fall, warm temperatures, fertile soil and adequate shading, develops superior coffee flavors.  Picked by hand only at the peak of ripeness, these arabica beans are processed with care and meticulously graded and separated by bean size and density.  All of the world's great coffees are 100% arabica, but only the top 10% have fine enough flavor to be selected as specialty coffee.  The fine flavor is determined by the cupping score.  To be considered specialty, the cupping score must be at least 80, using the SCAA criteria. What is "premium" coffee?  According to the SCAA Standard Classification Method, arabica green coffee beans are graded according to Category 1 and Category 2 defect equivalents. Specialty coffee cannot have any Category 1 defects and may only have up to five Category 2 defects.  Premium coffee may only have up to eight defects in either category.  Graded coffee with more than eight defects is considered "commercial" or "below grade".  After cupping, the remaining 90% of the fine arabica coffee, with still superb flavor, is considered premium coffee. What is "conventional/commercial" coffee?  The remaining coffee, the majority of which is traded in the commodity markets, is considered "conventional/ commercial" coffee.  It includes all robustas and the lower-quality arabicas. What is "cupping"?  It is a professional technique for evaluating coffee's Fragrance/Aroma, Flavor, Acidity, Body and Aftertaste. To be considered specialty or premium, coffee must exhibit distinct attributes in these five areas.  Moreover, such coffee must be free from odors, faults and taints. We both export the coffee from Bolivia and import it into the US so that quality is assured every step of the way.  Our US coffee warehouse is located north of Boston.   Because we are vertically integrated nobody can beat our prices. Coffee Grading:  Let's face it, not all coffee is the same.  How do you ensure that you get consistently good coffee?  You buy professionally-graded coffee.  Our coffee is graded and cupped before it is offered for sale.  Unlike other eBay coffee sellers who claim that their coffee is "top grade" without any documentation or proof, all our coffee beans undergo strict coffee grading using the objective and strict SCAA criteria.  We present the results of the grading process, under our "Coffee Specs", which is the first thing you see on our listings.  The most important factors determining the quality of coffee are bean varietal, bean uniformity and density, altitude grown, soil quality, care and technique in growing, processing, handling and transporting, and the ultimate "proof is in the pudding" criteria, the cupping score.  So next time you buy coffee, don't just take the sellers word for it, ask for objective grading results.  When in doubt, just cup a random sample.
