My jerky is prepared in a second kitchen of my home and is dried and smoked in my backyard smokehouse. Making jerky has been a hobby of mine for over twelve years. I’ve always enjoyed eating smoked foods, so I figured why not try making my own? I have an extra kitchen in my home. I built a backyard smokehouse and it’s been my passion ever since. I sell my beef jerky to local bars and at Farmers Markets. There’s always people calling my home to pick some up or have it shipped. I’m told that my Mountain Trail Beef Jerky is the tastiest jerky around. Definitely better than the commercial stuff. I’ve tasted that cardboard junk...dry and sugary. My recipe has been perfected over the years and kept simple, with four flavors to choose from (teriyaki, red peppered, black peppered, and my newest; honey-smoked). All have a teriyaki base, with no sugar added, and just the right amount of salt and other seasonings to keep you coming back for more. I use only the finest ingredients and take no shortcuts. Because my jerky is naturally smoked, the whole process for one batch takes two days. I start with USDA Choice Beef Eye of Round. After trimming and slicing thin, it’s marinated for 24 hours, then slowly cured to perfection for 15-20 hours in the smokehouse. The freshly smoked jerky is then brought to room temperature and packaged into resealable bags and vacuum packaged in 1/2 pound quantities. During the summer months, this is almost a daily process, trying to satisfy my many customers at Farmers Markets with a fresh product. you might pay a little more for my jerky, but after tasting it, I'm sure you'll agree it's worth every penny.
