BUYERS' GUIDE TO MAPLE SYRUP GRADES - Pure Vermont maple syrup is a nutritious food made by boiling the natural sap of the hard rock maple.  As a pure syrup, it provides the consumer with high nutritive values from its many trace minerals, vitamins, and amino acids - the building blocks for protein.  Yet, it only contains 40 calories per tablespoon.  Vermont maple syrups are similar to good wines in that they offer to the consumer a variety of unique, natural flavors, which have been defined by Vermont law.  You will find one of the following official table grades marked on each container ofVermont pure maple syrup.   Vermont Fancy - light amber color and a delicate maple bouquet.  A delightful, mild maple flavor, excellent on foods which permit its subtle flavor to be appreciated. Vermont Grade A Medium Amber - medium amber color and a pronounced maple bouquet. Characteristic maple popular flavor, for table and all around use. Vermont Grade A Dark Amber - dark amber color and a robust maple bouquet.  A hearty maple flavor, also very popular for table and all around use. Vermont Grade B - the strongest and darkest grade maple syrup, primarily used for cooking or for added natural maple flavor to further processed foods.   Maple syrup must be refigerated or frozen after opening and will last a long time if stored in the correct temperature.    We do offer local pickup.
