Wild blueberries, and floral notes of acacia and violets.  Low in acidity with superb fruit purity and density, this velvety smooth wine is perfectly balanced.  Round concentrated tannins develop mid palate before giving way to an extremely long finish.  This classic wine has the structural intensity that is certain to cellar well.   Recognition v     First place finish at the Celebourge restaurant group’s 2007 blind taste test event in Tokyo, Japan. Entries included, Dominus, Opus One, Joseph Phelps, Insignia, Far Niente, Silver Oak, and Chateau Montelena. v     Mr. Koichi Tanaka, a Sommelier representing the Celebourg restaurant group in Tokyo, established a price point of US$500.00/bottle at present with a projected price of US$800.00/bottle after three years of cellaring.  v       Wine Making Philosophy v     Hand crafted wine v     Wine is handled as little as possible (only 3 times a year) v     Low volume production per year v     Unfiltered and unfined   Vineyard v     The estate, located in the heart of Napa Valley, produces a minimal amount of hand crafted Cabernet Sauvignon wine v     The vines are 12 years old v     Rocky soil is prevalent throughout the vineyard which allows for excellent drainage v     Close attention is paid to canopy management in order to balance the effects of nature   Wine Making Process v                 Wine is neither pumped nor stored in stainless steel fermenters v                 Fruit is hand sorted after de-stemming to remove unhealthy fruit v                 Traditional wooden basket press uses a water inflated balloon to press skins v                 Wine is made from 100% free run juice v                 Wine is moved by hand into all new French Oak Barrels using heavy to medium toast levels   Bottle Specification v                 Bottle imported from Livornia, Italy v                 Weight is 900 grams (standard bottle is 400 grams) v                 Unique and exclusive double lip bottle design prevents the use of automation in the foil application process v                 Printing ¨      22 carrot gold silk screen ¨      Silk screened @ 1350 degrees Fahrenheit ¨      The label is fused into the glass and will not rub off   Cork Specification v     Cork is 5 centimeters in length  (Standard cork is 3.8 cm) v     Highest cost/quality cork imported from Portugal to preserve the quality of the wine        Shipping Policy Due to state laws and regulations we can only ship wine to the following states: AZ, CA, CO, CT, DC, FL, ID, IL, IA, IN, LA, MA, MI, MN, MO, MT, ND, NE, NH, NJ, NM, NV, NY, NC, OR, OH, SC, TX, VA, WA, WI, WV, WY.
