In fact, it is really an annual water-grass seed, "zizania aquatica." It grows naturally and wild in the cold lakes and rivers of Minnesota and Canada, but in such limited quantities that there is less than 1 lb. available for each 100 people in the United States. · Now considered a delicacy throughout the world, wild rice was once known only to Native Americans and still holds very special meaning in Native American culture. · During late August and early September - the Month of the Wild Rice Moon - the rice is harvested. Wild Rice is harvested green, and placed in long narrow rows about 10 inches in depth in a curing yard. While the wild rice is in the curing rows, the chlorophyll dissipates from the plant. To prevent damage to the seed, the process involves turning constantly, and adding water to closely approximate its natural watery repository. · From the curing yard the browned rice kernel with its seed hull intact goes to the parchers where the moisture is dried out. During this process, the starches gelatinize and the characteristic roasted nutty flavor is developed. From the parchers, the rice is hulled, removing the fibrous hull, exposing only the shiny black wild rice seed Quality · This wild rice is the top of the line – Extra Fancy. Wild rice is graded. The best is "Extra fancy." It is the longest rice with the greatest girth. The next lower size is "long grain", followed by "medium grain”, followed by "short" (sometimes called "broken"). Generally, the lower grades are sold to institutions and mixed with white rice or other foods. · Some people indicate that the color is an indication of quality or taste. This is not true. The color is only an indication of the processing treatment. Something else one reads is about “wood parched.” Some people may in fact use wood for heating as opposed to gas, oil, electric, but regardless of the fuel used, parching is still a drying process and the smoke from the wood, gas, etc. does not touch the rice. Therefore it makes absolutely no difference how it is parched (i.e. your furnace can burn wood, oil, gas, but the warm that circulates through your house never comes in contact with the fuel exhaust because of the heat exchanger) Taste · A deep nutty flavor, with a crisp aroma Healthy · It is a naturally healthy food with no cholesterol and with only one half gram of fat in 3/4 of a cup. It is also high in fiber, and has good nutritional value. Wild Rice has a higher protein, vitamin and mineral content than processed white rice. In fact, it has twice the protein content of polished white rice. One is to add 4 cups of water for every cup of rice. Once the water boils, one is to let the rice simmer for 50 to 55 minutes. Someone people have better results with a non-stick pan although I have personally never found it necessary to use one.
